Recipe: Dahlia Bread

Want something to do with the dahlia tubers that do not have eyes? Make bread!!!

In the fall when you cut up tubers to store or you broke tubers neck when you dig them out, save the larger tubers for making dahlia bread.



2 eggs
1 cup of sugar (200gr) or 1 cup sugar Twin for sugar free
1½ tsp Vanilla (7.5 ml)
½ cup cooking oil


Mix well then add

1 ½ cup unsifted flour (175gr)
½ tsp Baking Powder (2.5 ml)
½ tsp Salt (2.5 ml)
½ tsp Baking soda (2.5 ml)
1 ½ tsp Cinnamon (7.5 ml)

Mix well then fold in

½ cup chopped nut
½ cup chocolate-chips
1 cup ground dahlia tubers ( peel first)

Pour into a greased loaf pan and bake at 350°F 50-60 minutes. It is done when toothpick comes out clean.


Tricks of the Chef

You will need about 250 to 280 gr of unpeeled tubers to fill a cup of ground dahlia tubers.
When you peel tubers, they tend to oxidize quickly, put them in water to stay white.
This mix will make 48 small cupcakes that will bake in 25-30 minutes at 350°F.
Dahlia bread store well in the freezer.
